The best burger sauces and why we make our own mayonnaise

September 1, 2026

One of the most surprising things about burgers in Brazil is the importance of homemade mayonnaise.

The thing is, burger sauce isn’t just there to stop the bun from going dry: it adds acidity, creaminess, sweetness, heat or a smoky touch. Choose it well and it brings all the ingredients together, giving a good burger a personality of its own.

‍

What does sauce add to a burger?

‍

Meat, bun, cheese and toppings can all work separately. The sauce is what makes them all come together in the same bite.

‍

Its creaminess contrasts with the crust on the meat and the crunchy ingredients. Acidity helps balance the richness of cheese or bacon. Sweetness can soften smoky flavors, while a touch of heat can bring combinations to life that would otherwise be much more predictable.

‍

The best sauce shouldn’t hide the main ingredients. Its job is to complement them, balance them and, when needed, give them a little extra push.

‍

Classic burger sauces

‍

Some combinations have been working for decades and don’t need reinventing every Tuesday. These are some of the most common burger sauces and what each one brings to the table.

‍

Ketchup: the sweet and tangy classic

Ketchup adds sweetness, acidity and a familiar flavor from the very first bite. It works especially well in simple burgers with meat, cheese and just a few toppings.

‍

It also pairs well with salty and smoky ingredients, although it’s best not to overdo it. There’s a difference between adding a sweet contrast and turning your burger into a tomato with some other stuff in it.

‍

Mustard: acidity with character

‍

Mustard has more intensity and a tangy edge that can cut through the richness of meat, cheese or bacon. That’s why it works particularly well in loaded burgers that need a little balance.

‍

Of course, not all mustards are the same. Milder varieties blend in easily, while stronger or wholegrain mustards can become one of the main flavors.

‍

Mayonnaise: creaminess and balance

‍

Mayonnaise softens, brings everything together and adds a creamy texture without overpowering the other ingredients. It can work with a classic burger, crispy chicken or a combination of vegetables and fresh flavors.

‍

Its biggest advantage, however, isn’t just how it tastes. It’s everything it can become. Add a few ingredients and it can transform into a completely different sauce. And that’s where the fun begins.

‍

Barbecue sauce: sweetness and smoky notes

‍

Barbecue sauce usually combines sweetness, acidity and a smoky profile. It works particularly well with bacon, caramelized onion, crispy chicken and intensely flavored meats.

‍

It’s a sauce with plenty of personality, so it needs ingredients that can keep up. If the burger is more delicate, an overly powerful barbecue sauce can take control of the entire bite and refuse to give it back.

‍

Why does homemade mayonnaise have so many possibilities?

‍

Ketchup is ketchup. Mustard is mustard. But mayonnaise can go in almost any direction.

‍

It can be made with garlic, herbs, truffle, chili, spices, smoked ingredients or fermented flavors. Its creamy base can take on new layers of flavor without losing its ability to bring all the elements of the burger together.

‍

That’s why homemade burger mayonnaise is so important in Brazilian burger culture. In many burger joints across Brazil, you might find a fresh green mayo in one place, a spicy version somewhere else, or a garlic-and-spice combination that tastes completely different from anything you’ll find elsewhere.

‍

It’s not simply about “adding mayo”. It’s about creating a recognizable flavor that becomes part of the identity of the place.

‍

Hideout Burger has Brazilian roots, so that way of understanding sauces came with us to Barcelona. That’s why we make our own mayos and develop different recipes to complement each type of burger.

‍

Hideout’s mayos and sauces

Homemade mayo

‍

Our house mayo, also known as green mayo, has a fresh, creamy profile. It complements the ingredients without overpowering them and brings a touch of the Brazilian burger culture that lies at the heart of Hideout.

‍

You’ll find it in La Clásica, where it’s paired with a double smash, American cheese, baby lettuce, tomato, red onion and our homemade pickles. A familiar burger, but with a sauce that makes it clear that even our classics have their own signature.

‍

Black garlic mayo

‍

Black garlic has a deep, slightly sweet and complex flavor. By blending it into mayonnaise, we create a creamy sauce with plenty of character, but one that’s less aggressive than conventional garlic mayo.

‍

In the B.B. Krispy, it accompanies a fat smash with gorgonzola, homemade bacon jam and crispy onion. Its job definitely isn’t to go unnoticed, but to bring together a combination that goes big from the very first ingredient.

‍

Truffle mayo

‍

Truffle mayo adds an intense, aromatic profile. It works particularly well with cheese, egg and juicy meats.

‍

In La Españolita, it meets a fat smash, Emmental cheese, Iberian ham, free-range egg and grated Parmesan. A subtle combination, as you can see.

‍

Hideout sauce

‍

Hideout sauce is our house special. It starts with our homemade mayo and combines spices with more than ten ingredients to create an umami flavor, gentle heat and a light texture.

‍

It’s the sauce in our Hideout Burger, alongside a double smash, American cheese, crispy bacon, homemade pickles and caramelized onion.

‍

Ranch

‍

Ranch sauce adds creaminess, freshness and a slight tang. That balance makes it work well with intense ingredients, but also with crispy chicken, vegetables and fried sides.

‍

You’ll find it served with our onion rings and in the Bacon Jam, where it helps balance the fat smash, Emmental, homemade bacon jam, sun-dried tomato and arugula.

‍

BBQ ranch

‍

BBQ ranch brings together two worlds that work far too well together to keep them apart: the creaminess of ranch and the sweet, smoky profile of barbecue sauce.

‍

It’s a sauce made for seriously loaded combinations. You’ll find it in The Big Boss, with triple smash, American cheese, grilled onion and double bacon, and in the H.F.C., our extra-crispy chicken burger.

‍

Sweet BBQ

‍

Our sweet barbecue sauce has enough character to complement intense ingredients without overpowering them. Its sweetness and smoky touch work particularly well with meat, bacon and crispy preparations.

‍

We also use it to glaze our BBQ wings, where it’s combined with sesame seeds, crispy onion, lemon zest and fresh chives.

‍

What sauce should you put on a burger?

‍

There’s no single perfect sauce for every burger. If you want to choose without setting up a tasting session with twenty bottles on the table, these combinations usually work:

‍

  • For a classic burger with meat, cheese and vegetables, try homemade mayo, ketchup or a mild burger sauce.
  • If it has bacon or caramelized onion, a sauce with some acidity can balance the sweetness and richness. Mustard, ranch or a mayo with plenty of personality are good options.
  • With strong cheeses such as gorgonzola, look for a creamy sauce that brings the flavors together without adding even more intensity. Black garlic mayo can be a great match.
  • If the burger has crispy chicken, ranch, BBQ ranch or spicy mayo work particularly well.
  • For meat, bacon and smoky flavors, barbecue sauce is a safe bet.
  • If there’s truffle, egg or mild cheese, truffle mayo can enhance the aromatic profile of the whole burger.
  • When the burger already has lots of powerful ingredients, avoid adding a sauce that wants to steal the entire show.

‍

Homemade mayo isn’t just another extra

‍

Sauce can seem like a small detail until you try two identical burgers with two different mayos. Then it stops being that ingredient that “was also in there” and becomes the thing that makes the whole combination work.

‍

At Hideout Burger we make our own mayos because they’re part of the way we understand burgers and part of our Brazilian roots. Each recipe is designed to complement specific ingredients, balance their flavors and give each burger an identity of its own.

‍

The best way to notice the difference isn’t to keep talking about it, but to taste it. And you can do that at Hideout Burger Eixample, at Carrer del Consell de Cent, 242, or Hideout Burger Poblenou_)
